The Perfect Pizza

If you grew up outside of the Northeast section of the United States, you might very well have a different view of what is the perfect pizza.

The Perfect Pizza – According to QueerJoe

First of all, it needs to be Neapolitan style pizza. For me, here are the components that make up the pizza of my dreams:

  1. Crust – This is the most important part of the pizza as far as I’m concerned. The crust must be the perfect combination of chewy and crisp. It must also have the flavor of a dough that has been perfectly prepared and aged. I also think it needs to be the correct thickness of a maximum of 1/4″. The crust of the freshly-made pizza should not be to floppy or too stiff either.
  2. Sauce/Tomato – To be perfect a pizza could have either crushed tomatoes or a very simple sauce. But either need to be made with high quality ingredients and little or no seasoning.
  3. Cheese – Standard, whole-milk mozzarella cheese is all that is required. There are cheap, greasy mozzarella cheeses that make a pizza too greasy, but generally, the cheese is the easy part. The amount of cheese needs to hit that perfect balance of enough so you get cheese in every bite, but not fully covering the entire pizza.
  4. Doneness – I prefer most pizza on the well-done side. It typically brings out more flavor in the crust. But a perfect crust is great without making it well-done.
  5. Toppings – A pizza needs to stand alone and be excellent with no toppings. But if there are toppings, they have to be high-quality ingredients.

That’s it. I’m not too picky.

The best pizza I have found relatively locally is something they call a tomato pie (Trenton, NJ is famous for this version of pizza). The only real difference I can see is that they use crushed tomato bits instead of sauce. The best one of these in my general area is at a place in Bordentown, New Jersey, called Palermo’s Pizza.

This is leftover Palermo’s tomato pie. Half of it is topped with fried eggplant and the other half has extra garlic. My mouth is watering looking at this again.

Current Knitting

I was able to finish the left side of the vintage men’s underpants this past weekend.

The button-band looks a little sloppy, but I know that the buttonholes hold a button securely (and you can’t see the holes when the garment is buttoned.

I also got about an inch of ribbing done on the right-side of the underpants.

I did weigh the left-side and the remaining yarn, and I should have enough yarn to finish this project.

But will I have enough time?
